Here's a summary of my experience cooking two turkeys in our new Orion Cooker.
My first cooking test was with a 13 lb. turkey that was rubbed in the almost famous POEBOY rub, applied just before entry into the cooking chamber. I added 24oz of apple jucie to the drip pan and lined the outside with cherry wood.
I used a blend of regular charcoal and lump charcoal, filling the ring around the outside about 2/3 full with non lit product. I lit a fire in the chimney full with a mix of charcoal and, when fully lit and fire shooting out, I poured it over the unlit charcaol in the ring and a few burning on the top of the cooker.
I inserted my thermo probe deep into the right breast of the bird and closed the top. I've got a wireless meter with time and temp that can pick up the signal for a hundred feet plus. The turkey was done in one hour twenty minutes when I pulled it out at 175 degrees.
After a thirty minute rest I ripped off a leg and WOW, what flavor and juices running down into my belly. I then consumed a wing, and again, the best juicy leg and wing I've ever eaten. The breast was sliced with juices exploding from within. My family was in pure delite eating such a fine and not dried out bird that needed no gravey or spices.
I cooked two 14 pound turkeys at the tailgate, one in the Orion Cooker and the other in the Keg Roaster by CampChef. I brined these two birds together in the same large pot for 12 hours in this mixture.
2 gallons cold water
1 gallon apple juice
1 gallon orange juice
6 cups Kosher salt
1 cup brown surgar
20 cloves whole
2 tablespoons ground nutmeg
12 whole cinnamon sticks
1 large bunch cilantro
I brought the mixture to a boil, then cooled it down with ice prior to pouring over the birds and left to soak all alone in the motorhome for the night and trip to the game. I added 3 cups of Atwater Winter Bock beer to the drip pan and pecan wood on the outside of the pan. Everything else was the same, except for the 15 mph breeze which extended the cooking time by an hour.
Family and friends sampled with joy and stated that it was the best and juicest turkey they've ever had.
